Makes or Serves: 4-6
Roll out pastry on a lightly floured worktop and line a 20cm (8 inch) flan ring. Prick the base and bake blind for 10 to 15 minutes.
Mash the cheeses together and add the pepper and tomato. Stir in eggs and fresh cream and season to taste with salt‚ pepper and nutmeg.
Pour into the flan case.
Bake for 20 to 30 minutes at 180 degrees C‚ 350 degrees F or gas mark 4.
Serve hot or cold.
